Classic Raspberry Jam

Three ingredients? Yes. This classic raspberry jam calls for equal parts sugar and fruit but I just can't take that much sugar...up to you. Can you dress it up with spices or lemon rind or brown sugar or vanilla? Sure. But you won't want to after you have a simple sandwich with this and your favorite sharp cheese. Or this and nut butter. Or this and cream cheese. Or this and this.

4 cups raspberries, washed and picked through

3 cups sugar

juice from 1 lemon

Put raspberries and sugar in an enamel pot. Heat and mash. Boil and add lemon juice. Boil for 5-10 minutes. Pour into glass jars and process or keep in fridge for a few weeks. Makes about 4+ cups.
