Grandma Ruth’s Double Streusel Coffee Cake & Einstein’s Theories

Oh, Mr. Einstein with your wondrous hair and brain.  You theorized that it would be possible to overlap past and present and I am hoping you can make that possible so that I can dine with the great grandparents I know only from stories of root cellars and Yiddish accents and English maids and also so that my four little children can have brunch with Grandpa Phil and he can give them a bag of quarters and spearmint leaves.  And I can see my beloved Papa just once more.

And we would have cake.

Grandma Ruth's Double Streusel Coffee Cake (nut-free)

For cake:

1 cup wheat flour

1 cup white flour

1 cup sugar

3 tsp baking powder

1 tsp salt

1/3 cup butter, soft

1 cup milk

1 egg

2 tbsp olive oil

For streusel:

2/3 cup brown sugar

1/4 cup flour

1/4 rolled oats

2 tsp cinnamon

1 stick butter

Oven to 350. Make streusel by mixing all ingredients until butter is incorporated and everything is the texture of grainy sand. Mix cake ingredients in mixer bowl. Spread 1/2 batter into a greased 9x13 pan. Sprinkle with half of streusel. Pour rest of batter on top. Sprinkle remaining streusel. Bake 40 minutes or until tester is clean. Remember the relatives who came before you.
