Latkes (Crispy Potato Pancakes) & Positive Energy

Without sounding all yoga, I have the following to say:

It takes just as much energy to be and say negative things as it does positive.  This time of year – but really in all seasons – life is much more enjoyable when we spread kindness and joy.

That is all.

That, and the best darn latkes.  Served with applesauce, sour cream, or my personal favorite: crisped in the skillet the next day with a fried egg and spinach.

Just try and be ungracious or petty or spiteful after eating that.

Or don’t.

  1. Great recipe! I’ve used this one for years, it’s a classic. Only dif is that I use 1 egg per cup of potato. I freeze a bunch of these and have one with an over easy egg on it for breakfast. You have a terrific blog Emily.

I made my latkes just a bit differently in the past but tried your recipe tonight and my husband and I really thought that they were yummy! I will try the winter squash soup soon.
