Tomato-Onion Soup with Fresh Parmesan & Happy Days

Dear Scott Baio,

Thanks for appearing in my dream last night! The party was really fun, even though the staircase had weird turquoise and brown carpet and there were chickens inside your house and there was no soup in my mug.  I’m sorry to say that you are 30 years too late in your proposal.  I will give you back your bandana next time I see you.

Tomato-Onion Soup with Fresh Parmesan

This is not a fussy soup so use any kind of tomatoes and onions - even red. Basil overpowers the soup so unless you need to use some up, refrain from over-herbing. Grill some flatbread and dip.

1/3 cup olive oil

2 large onions, thinly sliced

2-3 lbs tomatoes, cored

few pinches sea salt

2 cloves garlic, crushed

1- 1-1/2 cups vegetable broth

Fresh Parmesan to taste

Heat the olive oil in a deep pot. Add the onions and saute until caramelized, browned but not crispy. Add tomatoes and stir, cooking until tomatoes are bursting. Add salt to taste and garlic and continue cooking for a few minutes until tomatoes are soft. Add broth (add bit by bit so you can choose how thick the soup is) and heat well. Blend. Top with cheese and try to remember your dreams from the night before.
