Apricot Bars & Holiday Weekend

Sometimes, a person needs a good, buttery apricot bar with which to greet the day. Or to serve after a bbq lunch. Or to have with a cup of iced tea in the mid-afternoon. Or at night, when the house is quiet and the only light comes from the fridge.

Buttery Apricot Bars

1 cup dried apricots, chopped

4-6 oz. apricot preserves (try Emma's Pantry)

2 sticks softened butter*

1 ½ cups flour (a mix of all-purpose and wheat is fine)

1 ½ cups rolled oats (not instant)

1 tsp. baking soda

½ tsp. salt

1 cup brown sugar

Heat the oven to 350. Cover the apricots with boiling water. Set aside for a few minutes and drain. Grease a 9x13 dish with butter. Mix the dry ingredients and cut in the butter. Press half of the mixture into the pan and cover with the chopped apricots. Take a teaspoon of the leftover hot water that was used to cover the apricots and use it to loosen up the preserves. Drizzle the preserves over the crust and chopped apricots. Press the other half of the dough on top and bake until golden – about 40 minutes. Let the dish cool completely before you cut into squares or rectangles

*vegans please use coconut oil or other
