Crispy Broccoli Florets & Healthy Eating

Jan 2, 2012

About this time of year we are inundated with ads and suggestions about shedding holiday pounds or resuming/beginning healthy habits.  I’m not here to tell you to do that.  I am here to tell you that once you make these little crispy, lightly salted*, perfect for picking at snack, your desire for chips or brownies might fade.

If not, as least you tried.

*for those trying to follow a no-=salt regime, leave the salt out and, when cooked, squeeze a bit of lemon on instead

Crispy Broccoli Florets,/h3>

4-5 cups broccoli florets

3-4 tbsp olive oil

2 big pinches sea salt

1/4 cup shredded parmesan cheese (optional)

Oven to 400. Make sure the broccoli is very dry and in bite-sized pieces. Coat with olive oil, mixing and tossing with your hands until well-distributed. Spread in one layer on baking sheet. Sprinkle salt on top. Roast for about15-18 minutes or until crisped and browned on underside. Sprinkle with cheese if desired. Snack on right away.

Yum! I eat broccoli almost every day, so this is a nice variation. Thanks Emily, and Happy New Year!

I will try. It may help. I’m thinking of just buying a kaftan instead. 😉
